Grilled Prosciutto-Wrapped Pineapple Skewers with Hot Honey

Sweet and tangy pineapple cubes wrapped in savory prosciutto, grilled until caramelized, and finished with a quick hot honey glaze. A perfect appetizer for the grill or pizza oven.

Equipment

  • Metal or Soaked Wooden Skewers Wooden skewers must be soaked for 30 minutes.
  • Grill or Pizza Oven Used for cooking.
  • Small Saucepan For the honey glaze (optional).

Ingredients

  • 1 Fresh Pineapple Cut into 1-inch cubes (about 16 pieces)
  • 4 slices Prosciutto Thinly sliced, cut in half lengthwise
  • 2 tbsp Olive Oil For coating pineapple
  • 1/4 cup Honey For the glaze
  • 1/2 tsp Crushed Red Pepper Flakes Adjust to taste for spice.

Instructions

Preparation

  • Make the Skewers: Cut the pineapple into 1-inch cubes. Cut the prosciutto slices in half lengthwise. Wrap a piece of prosciutto around each pineapple cube.
  • Thread 3-4 wrapped pineapple cubes onto each skewer. Brush all sides of the skewers lightly with olive oil.
  • Prepare Glaze: In a small bowl (or saucepan, if heating), combine the honey and crushed red pepper flakes. Whisk briefly.

Cooking

  • Grill Method: Preheat grill to medium-high direct heat. Place the skewers on the grate and cook for 2-3 minutes per side, turning until the prosciutto is crisp and the pineapple is caramelized with grill marks.
  • Pizza Oven Method: Place the skewers directly on the clean, hot stone or in a high-heat safe pan. Cook for 1-2 minutes per side, turning frequently until the prosciutto is crisp and the pineapple edges are slightly charred.

Finishing and Serving

  • Transfer the cooked skewers to a serving platter. Drizzle generously with the prepared hot honey glaze and serve immediately.

Notes

If using fresh pineapple, ensure the cubes are patted dry before wrapping the prosciutto to help the meat crisp up faster. Canned pineapple chunks can be used in a pinch, but fresh is recommended.
