Preparation
Make the Skewers: Cut the pineapple into 1-inch cubes. Cut the prosciutto slices in half lengthwise. Wrap a piece of prosciutto around each pineapple cube.
Thread 3-4 wrapped pineapple cubes onto each skewer. Brush all sides of the skewers lightly with olive oil.
Prepare Glaze: In a small bowl (or saucepan, if heating), combine the honey and crushed red pepper flakes. Whisk briefly.
Cooking
Grill Method: Preheat grill to medium-high direct heat. Place the skewers on the grate and cook for 2-3 minutes per side, turning until the prosciutto is crisp and the pineapple is caramelized with grill marks.
Pizza Oven Method: Place the skewers directly on the clean, hot stone or in a high-heat safe pan. Cook for 1-2 minutes per side, turning frequently until the prosciutto is crisp and the pineapple edges are slightly charred.
Finishing and Serving
Transfer the cooked skewers to a serving platter. Drizzle generously with the prepared hot honey glaze and serve immediately.
Notes
If using fresh pineapple, ensure the cubes are patted dry before wrapping the prosciutto to help the meat crisp up faster. Canned pineapple chunks can be used in a pinch, but fresh is recommended.
